Aquatic Koi Would this work?

So i am closing on a new house soon, and have always found koi fascinating. However since we are first time home buyers etc we arent going to be able to immediately build a real deal koi pond. I was curious if this would work:

Buy a large aquarium and buy small/baby koi (im talking 3 or 4) and keep them in there for a year or 2.

Once they outgrow that, we have a small garden pond already here. Id move them to it, possibly modify it as well to be deeper / a little wider and be sure to predator proof it extra well.

After another year, build a koi pond. I was thinking of digging 2 or 3 feet down, then setting concrete blocks with liner and the rest of the setup. How viable is this? Ive been doing a ton of research lately and know is isnt optimal, but figured for short term i would ask!

Eating from Hands

I really love my koi and have been wanting to get closer to them for a while. I've been training them for ages and they're eating from my hand at last, but can I get any tips? It's very difficult to push food into their mouth and the food floats away if I cup it in my hands. The biggest fish is the only one that'll eat from hands but it's clumsy and it manages to suck the food from between my fingers maybe 4 times out of 10🙁 It's annoying because I spent so much time building the trust so I was wondering if anyone could give me advice. Thank you!
