Do I need snail(s) in a Walstad-like tank if I am going to stock shrimp? I'm worried they will just take up precious bioload. (long-ish post)

I'm a beginner, cycling a 12 gallon long heavily planted tank right now. I am not going "full Walstad", but many of the choices I have made so far follow the ideas behind that style of tank. (Some key differences: I have a sponge filter, I'm using ADA Amazonia instead of soil and a gravel top layer, and I'm planning on regular small water changes in order to maintain a specific TDS/PH for sensitive fauna).

One of the big assertions Diana makes in her book is that you can fertilize your plants using fish food. She claims that you can do this by overfeeding and letting the shrimp and snails break down the food/detritus small enough for bacteria to process into the nutrients plants can absorb. I think that's such a cool idea! But I don't think my tank is big enough to support both a colony of Malaysian Trumpet Snails and the Shrimp / Fish I actually want to stock.

Is it possible to establish this kind of cycle in this small of a tank, and can I do it just with shrimp, without stocking snails? If snails are necessary, could I do it without pest snails? Maybe with nerite, or japanese trap door snails? I want to have control over the snail bioload so I can ensure there is enough space in the tank for my shrimp and fishies to be happy.
