HANK - New owner and need some advice please

Last week my family bought live crawfish for dinner and I felt bad for them, so I snuck one in a tupperware and took him home. I've been feeding him Crab Cuisine pellets and cut up potatoes. I've read on here frozen peas are good. I have so many questions and read a few things, but need some clear answers please!

What else can I feed him? How often? Do they get lonely? I was thinking of getting another crawfish, but not sure how he would get along with them. Are there specific types of fish I can also put in the tank?

Also this is the first I've heard of crawfish molting (shedding)?! I never knew this.. and I would like to prepare myself for the day he does molt. Any advice?

It's only been a week and I am obsessed with Hank. He is so cute. Here's a photo of him with a lil piece of chicken in his mouth.

Identifying Champy

Alright, so I've been told in a previous thread "How to know when enough calcium is enough?" that I should identify my Crawfish to find out if they have any specific care needs, so I'm putting all of the information and photos I have of Champy on here to see if I can get some help.

Champy is a Crawfish that was found in the parking lot of Champy's Fried Chicken, a restaurant in my area. After speaking to the restaurant owner I found out they order their crawfish from a supplier in Louisiana and that's all they know.

Champy is red in color, currently a slightly grey-ish red as I imagine he's been stressed from losing his claws and it hit his health pretty bad (but we're working on it a day at a time)
