will my crayfish ever stop hiding?

so i have what looks like a juvenile white spectre crayfish and he seems to always be hiding under the piece of driftwood. while i understand that at first, any animal would be scared but just wondering if crayfish are always like that or do the grow accustomed to his environment? i have to slo mo walk on the rare occasions that he does walk out of his driftwood "fort" since if make any sudden movements he darts back inside. here's a picture of him:

Was told to get these out my betta tank. Thought I'd put them in the crayfish tank to clean a little before they get eaten. My crayfish isn't a predator apparently. Should I leave them and see if he eats, or get rid of them now?

He keep leaping backwards 4 5 times every now and then. I read it might be because of something he doesnt like, like the water parametres.I changed the water recently,like 10 l in his 55 l tank.He seem to be doing this only to jump on the filter ,the heater or on a branch he cant climb on.He is also very energetic,always running around,.He is alone for now in the tank
