First planted tank

Hi, this is my first post and my first experiance with a planted tank. I do find the cycling process a little confusing and id love for any advice or some opinions on how my tank is going. My tank is 290 litres or 76 gallons.I filled the tank 3 weeks ago and added prime set the cannister filter up and left it alone, I started introducing plants and feeding lightly with fish food (no access to pure ammonia) to encourage the cycling process at about 2 weeks.My tap water is in fact bore water but i did test the paremeters with the api master test kit and also tested the hardness level before filling my tank and everything was within the ranges they should be and the plants look quite healthy so im assuming its ok..Today my results were between 0 and 0.25 ammonia ( the api kit colour chart is confusing!) 0.50 nitrites and 5 nitrate..Is this where my cycle should be at 3 weeks and has the second phase started with the rise in nitrites? Hopefully i havent asked too many silly questions haha thanks for any responses.

I would really like to grow a MC carpet, and I can't get it done. I've tried doing a dry start but that failed miserably, so I decided to flood my tank and try again with a new batch. I'm doing weekly water changes, adding fertilizer and I have a simple CO2 system connected. My lighting period is 8 hours. There is a little melting as I expected, but I see some growth as well after 3 weeks. All of the leaves are turning light green though and I'm having a bit of trouble keeping everything from floating. Any advise? I'm so afraid this is going to fail again 😅

Edit: my MC is pearling at the moment, so I guess that's a good sign?
