Help! Newly added shrimp jumping around then freezing up.

I got 7 Crystal Black Shrimp today from an ad on Gumtree (aussie craigslist essentially), and added them in at about 1:30pm. I drip-acclimated them for 10 minutes, then let the bag sit in the water for about 5 minutes to acclimate to the temperature. My tank is a 5 gallon (20L), planted, cycled for a month.

About an hour ago (8:30pm) I noticed one shrimp was jumping around and then freezing up. He seems to be stretching his tail up, and then down again slowly over about a 2 minute period and then swimming a bit and then jumping around again.

I turned off the lights, and now there are a couple more shrimp doing the same thing!!

When they're stretching their tails up and then down again, the legs/mouth twitch a bit.

I'm freaking out because if the water parameters suck, and the tests strips I've got are dodgy, then how the heck am I supposed to deal with this???

I've added in an almond leaf to soften the water, but I don't know if that's going to make things worse or not!!

Please help!! I've been looking forward to getting these shrimp for ages and I'm only slightly losing my mind!!
