How to avoid plants getting demolished by crayfish

Hello!
I've had my crayfish for about a month now, and I bought some hornwort, thinking it could float around the top of the tank and she wouldn't be able to get at it. Unfortunately, the stuff would always just end up getting pushed to the bottom of the tank by the water pouring from the filter, and she's eaten pretty much all of it already! I like having it in the tank for the fish to rest in at night. Is there any trick to keeping floating plants floating or otherwise out of the crayfish's reach?
