5 Week Update, and I have questions

Hey Y'all

I'm 5 weeks in now, and still babying every little thing in the tank. I have a few questions that I was hoping this community could give me some advice on. I have been told by many people that I am the most patient person they know, but dear god this hobby is an epic test of patience. I am prepared to accept that the answer to most of these questions is 'You need to be patient and just wait.' but I thought I would ask any ways.

  1. Monte Carlo issues - Just about everything in the tank is growing pretty well except for the Monte Carlo. It's coming in, but most areas just look like large patches of wilted leaves. It may be brown algae on the leaves, but but i'm pretty sure a good amount of the leaves are wilted. Should I cut those sections out because they are blocking light to the healthier new growth? In searching for the answer to this I ran across a post saying that Monte Carlo will not benefit from dosing ferts in the water column, and really requires root tabs. I added some tonight so we'll see, but is this correct? How do you know when ferts in the soil are required over delivering them via the water?
  2. When I started the tank I did a short dry start, flooded the tank about a week after planting. After flooding I used a dose of SafeStart, and used SeaChem Stability up until a few days ago. I added a few shrimp at a week and a half, and fish at around two weeks. I test the water daily, and I have never seen any ammonia, nitrite, or nitrate...that is normal with using something like Stability.....right? I have read that sometimes it will take 45+ days to cycle, but I assume with this many fish pooping in here I would see a major spike if it wasn't cycled. The lack of nitrate seems a little odd I guess, but the could the plants be taking care of all of it?
  3. Random Shrimp Fatalities - I've lost about 5 shrimp in total, all but two at different times. The first two were after a water change, chalking that up to shock and I am being more careful with water changes now. Out of the other 3, I think 1 could have just been weak stock. The other two I was surprised by. The food i'm feeding does have copper sulfate as the very last ingredient on the list. I went looking for food without copper sulfate and I was advised by my LFS owner that as long as i'm doing my water changes I really don't need to worry about the tiny tiny amount of copper in the fish food. I know this is debated all over, but if I test for copper and get 0ppm then it isn't copper killing them, right?

30 Gal, Aqueon canister filter, heater at 72, 1 extra tiny powerhead, CO2 coming in via inline reactor 1 BPS, Planted Plus 24/7, 0.5" base layer of Eco-Complete with another 1"-1.5" Fluval Plant & Shrimp

0 NH3, 0 Nitrites, 0 Nitrates, 0 Copper,3~4 KH, 7 GH, stable at 7.4 PH,

Dosing Seachem comprehensive… 6-7ml 2 times per wk
