My electric blue crayfish escaped his tank after moving apartments. Will he be okay?

I just moved to a new apartment, and I finally got my tanks moved yesterday. I set them up and everyone seemed to be doing fine, except my crayfish. He lives in a 20 gallon tall tank and his only tank-mate is a king betta (they both leave each other alone; crayfish stays at the bottom, betta stays at the top/middle, I haven't even had aggression at feeding time).

Everything seemed normal when I went to work this morning, but when I got home, I found him on the floor a few feet from the tank and I honestly don't know how my dogs didn't find and eat him. I thought he was dead at first, but I put him in the water and he's apparently alive, but extremely sluggish.

I'm out of test strips rn, but I will go have my water tested tomorrow at the pet store to see if the water chemistry is off. Could that have prompted him to jump ship?

Will he be okay? Why did he escape? What can I do to prevent this in the future if he pulls through?

P clarkii can't eat

My P Clarkii appears to have trouble eating. He goes after food but picks it up and drops it. The only thing that keeps his attention is his earthworms. He will bring food to his mouth but he doesn't open it. Could it be that something happened to his mouth? I've only had him since April in a cycled 20 gal, no tankmates. Hasn't molted in a month. He leaves his food to rot and I have to scoop it out. Haven't seen cray poop in quite a while. Can I do anything?
