Are fancy crayfish more fragile than common wild ones?

For the past 6 months I've been keeping a wild crayfish as a pet. He's in a 2 gallon tank, half full with no filter or live plants (he does have rocks and a hide though). I feed him the occasional meat scrap, carrots, and apple. I do a full water change every 2 weeks and use untreated tap water. By some miracle he has survived 6 months this way. You guys are probably horrified rn because I take it this is really bad crayfish husbandry. What kind of setup do I need before I get a blue cray?

Hey everyone. My hurtled cray (only 1 claw and few legs) has been hiding in its coconut shell for about 20 days now... Doesn't eat and doesn't show up.. Ever. What can do to help him? And when should I consider he's probably dead and should check him out? As you can see he has cuttle stone to help..
