Any Crayfish Hunters/Eaters?

Hey guys, while I do find all the crayfish things (pets mostly) adorable and fascinating, is there any among you who actively catches and eats them? I know there are some of you who study them too! I'm in Montana, and am hoping it thaws soon enough cuz I wanna try my hand at crayfishing here soon, any advice? I have the trap ready to go!
