Shrimp keep dying trying to molt, help please!

I've had two shrimp die today while trying to molt (evidenced by the white stripe along their backs left/right) I checked all the water parameters I can (ph, ammonia/nitrites/nitrites) and all were perfect, so I'm guessing its the kh/gh. I don't have the means to set up reverse osmosis right now, and mineral stones are sold out everywhere near me. (idek if those help, research was conflicting) is there anything I can buy to save the rest of my shrimp?

it might also be worth noting that of my cherries, they are dying in order of smallest to biggest basically perfectly. I'm pretty certain that my cherries were all juveniles. I bought some rilis a few days later and they were all so much bigger and more active than the cherries.

I upgraded my betta tank, can I put shrimp in the old one?

I moved my Betta from a cylinder shaped 2.5 gallon to a 5 gallon aquarium, and I was wondering if I can put shrimp in the 2.5 gallon. Since it's round, it's difficult to add a filter/heater without taking too much space. I would hate for the tank to not be used, but it's a little small for any fish. Any suggestions? Thanks!

Nitrite spike

So I'm still currently cycling, on the 17th I did a 2nd dose of ammonia and got it up to 2.0ppm and nitrite was 0.50ppm fast forward to today my ammonia is currently at 0.50ppm and nitrite is at 2.0ppm I still have a while to cycle since ammonia hasn't gone down to 0ppm within 24hours. My question is that do I dose ammonia again? Half? Not a single dose until nitrites come down? I couldn't find anything on google I just need a direct answer please and thank you
