To sand or not to sand?

I am upgrading to a new tank on the 1st and I have done sand in the past on nano tanks and have mixed feelings towards it, but as my oranda has grown he's got into the habit of really sucking on the gravel pebbles and taken longer than I'd like to spit them out. I am just worried about the poor bugger ingesting sand and that irritating the bowels, but at the same time I am terrified of gravel created a blockage at some point as he grows. This wasn't such an issue when he was a tiny little bean, but now that he is blowing up, this is getting concerning and I don't want him to choke or get impacted from a gravel.

Also any tips on how to avoid anaerobic gas pockets? I have two shrimps and a snail, maybe I should consider some cories? What about the debate on to stir or not to stir the sand? I typically do not out of concern of pushing organic waste too deep. EDIT: I do not tend to make my substrate deep beyond two inches.

My juvenile lionhead goldfish got ahold of a pea shell/skin.

I'm very concerned that I just made the biggest and dumbest mistake I've ever made with goldfish. He got ahold of a pea skin that I didnt see and he ate it. Anyone here ever make this mistake and if you did, will the fish be alright?
